I did this one time in desperation...but...

You are starting with far too bright a light source.

Most slide projectors do not really do a good enough job of evenly
illuminating the field (YMMV).

You will get much higher resolution with a lens optimized for the
purpose.

And, in this day and age, enlargers are cheap.  We've seen several
really excellent enlargers with high end color heads offered for free in
the last few months.

So, in principle, it is possible, but I wouldn't do it.  Assuming you
have the rest of the darkroom stuff I think I'd look for a used enlarger
before I would try to go the slide projector route.
