Any of the three should be fine, but....

Baseline standard is certainly the most common and everyone will be
able to read it.  From my understanding, everyone should be able to
read baseline optimized as well.  The optimization is done by PS (or
whatever is writing it) but the image format is such that there is no
difference in the decoding algorithm for an optimized image.  The
progressive format can be read my *most* readers but not all.  A
progressive image is the ones where you see the image detail fill in,
er, progressively as the image downloads.  I use it for some of my
images but I've got mixed feelings about it.
