This is a typical CCD image where all the star color information
has been lost in the clipping and reduction to 8 bit/channel color.
Unless steps are taken early in the process to preserve the small
color variations of the stars, they all end up as white.
Of course, I'm not telling you anything; you wrote the book
(well, tech paper anyway) on star colors:
