Here is the Nikon lens to Canon EOS body adapter that I use, it's sold by
Photodiox and is sold on EBay for $30:

I've used it on a Canon 1D Mark II body with Nikon lenses that have an
infinity stop and the infinity stop is accurate on the Canon bodies.

I would go with a Canon.

There are definitely issues with using these lenses wide open on
high-resolution digital sensors. I know you have very high standards also
and I wouldn't be surprised if you run into these problems with Nikon
Telephotos also. I know you've been shooting CCD, but I don't know if you
have tried using any regular camera lenses with your CCD camera, but many
flaws that are hidden in film images are revealed in digital sensors. I
guess they just have to be stopped down even more.

The Nikon lenses will pretty much work completely with all of their
features on a Nikon digital body. Everything will be manual if you put a
Nikon lens on a Canon body.
