 Hey Stuart...

     I've only used Photoshop 7, but I do know that the 'Adobe Gamma' dialog was part of Photoshop from v5 on... I *think* the 'color management' (e.g. embedded profiles) dialog began with v5, too.

     In PS 7, go: Image --> Mode --> and either 'Assign Profile' or 'Convert to Profile'... if these options are available in v3, you should access them in similar fashion.
