With any reasonable scanner, if you get full-depth unclipped data out of it, with the histogram using up most of its space, you will preserve all of the content. The rest of the manipulation can be done in PS or whatever tool you use.
* 8-bit per channel data is not enough depth.
* Use gamma setting to get the histogram to stretch from near-left side to near-right side.
