I think your statement is misleading. You can (and should) save the image layers as a PSD and go back to adjust the image as many times as you want. You don't need to to explicitly flatten in order to print or generate a JPG, because it is performed automatically.

I can and do go back to PSD images to make slight adjustments. If a JPEG is needed, I then generate one.

I suggest that people judge the merits of such assertions by examining the results.
