Steve:
I think the Patterson reel should work. I think it grips the film with little 
ball bearings which adjust for the film thickness.

I'd suggest you get a 'trash' roll of 120 film, doesn't matter what kind and 
practice
your technique over and over, in the light and then the dark. You will learn 
how the film wants to behave and handle it accordingly. Yes, 120 film and 
especially Tech Pan is thin and feels much more flimsy than 35mm film.
